Treat your mum to a hearty breakfast

Mother’s Day is just one day of many days out of a year that we show special appreciation for our deserving mums. While a bouquet of flowers and a surprise gift are always a sweet and nice way to start this Sunday, why not go the extra mile to show more sweetness to your mum by cooking her a wholehearted breakfast and sharing some quality time together. 

Here is a simple and fast French Crêpe recipe that will certainly delight your mum. 


Homemade Crêpes with fresh fruit and Mānuka honey

Ingredients

2 cups plain flour
a pinch salt
2 eggs, lightly whisked
2 cups milk
2 tsp Melora UMF® 5+ Mānuka honey for the batter, prepare some extra for drizzling
2 tbsp butter, melted and cooled
Mum's favourite fresh fruits 
Whipped cream (optional)

Directions

1.Combine the milk, flour, eggs, Mānuka honey, butter and salt in a large bowl and whisk together until the batter resemble thin cream. Let sit for 10 minutes. After 10 minutes, heat a 30cm non-stick flat pan to a medium heat. Grease thoroughly with butter.
2.Pour 1/3 cup of the batter into the centre of the pan at a time, swirling the pan around to spread the batter into an even layer. Cook each crepe for 1 minute or so until it looks firm and lightly browned. Use a spatula, carefully lift the edges of the crêpe, flip over and cook for a further 30 seconds. 
3.Prepare Mānuka honey for drizzling. Authentic Mānuka honey naturally comes with a caramel-like thick and chewy texture. To prepare your Mānuka honey in runnier and softer consistency, place a small bowl of Mānuka honey in a larger bowl of warm water, stir gently till the honey slowly softens. 
4.To serve, fold one crêpe into triangle, place mum's favourite fresh fruits on the crêpe. Drizzle with some Mānuka honey to add more indulgent sweetness. 
5.Enjoy the delicious crêpes with your mum!
